Fazenda Cachoeira da Grama began with an idea. In 1890, a then young and recently widowed mother of 4 by the name of Ines began exploring the North Eastern region of Sao Paulo with the help of her uncle. She quickly discovered the potential for coffee growth in the area and gave the investment a shot, purchasing large chunks of land, These pieces of land have come to be some of the most valuable land in Brazil, yielding the best coffee in the world After 125 years, the Carvalho family continues to keep the tradition alive, keeping the learned skills of selecting the best coffee beans and processing them in a way that preserves the best flavours. Better farming methods, ideal location provides best possible altitude, precipitation and temperature to produce Yellow Bourbon coffees, famous for their exceptional quality. A 400 hectare farm sits at an altitude of 1000-1200m in a region where some of the finest coffees in the world are produced. Coffee is harvested manually on cloth, preventing beans from getting in touch with the earth. The coffee processing is done as fast as possible to avoid any chance of bad fermentation. The harvested coffee is immediately transferred from production fields to processing, with the separation of the cherry and green beans from the dry beans, which are sent to the patio to dry. The cherries and green beans are processed by the coffee pulper, where the cherry beans are pulped and separated from the green coffee. A planting program of native species is followed to help keep a better ecological balance. The farm itself has a school, a club and an official size soccer field for the employees' benefit. There are 48 houses for the employees and their families, all with modern facilities. The wastewater is treated to avoid polluting the stream that runs across the farm. The farm is certified for complying with BSCA and is Rain Forest Alliance Certified. It has been awarded many Cup of Excellence awards.
